Arepas Con Queso: Inspired by Encanto

Inspired by Disney’s Encanto, I am making the Arepas con Queso that heal all wounds. These arepas are easy to make, oozing with cheese and are a great snack! Fill them with more cheese for a classic Arepas con Queso or stuff them with meat and beans to make them extra delicious. Either way you’re sure to enjoy them!

Ingredients
  

  • 3 cups warm water
  • 1.5 tsp salt
  • 1 1/2 cups pre-cooked white cornmeal arepa flour, see note
  • 1 1/2 cups pre-cooked yellow cornmeal arepa flour, see note
  • 1/2 cup shredded mozzarella separated in half

Instructions
 

  • In a large bowl, combine water and salt.
  • Mix in cornmeal and cheese, and let sit for 5 minutes
  • Knead until smooth and holds together with a play-dough like consistency (3-5 mins), add more water if necessary.
  • Divide the dough into evenly sized balls; 8 for large or 10 for smaller).
  • Wet hands to help shape patties. Press until they are about ½ inch thick.
  • Over medium-low heat, preheat a lightly greased large pan.
  • Add the arepas and cook on each side for about 5 minutes. Both sides should be browned and the arepa should be cooked through and not wet!
  • Allow the arepas to cool slightly (enough so that you can touch them without burning yourself!) Slice them in half and fill with the remaining cheese.
  • Put the arepas back on the pan and cook for a few more minutes on both sides until the cheese is all melty, gooey and delicious!

Notes

Note: You can use just white or yellow cornmeal instead of mixing the two. I like the taste of the two mixed together but they are still delicious with just one.
