Yor's Stew: Inspired by Spy x Family (gluten free)​

Inspired by Spy x Family, I'm making Yor's stew. A central European inspired stew filled with veggies, meat, paprika and caraway. A dollop of sour cream brings it all together. Topped with a fried egg and an Octopus hotdog, just like how Yor's mom made it. It's easy and cozy. You should definitely try it out.

Ingredients
  

  • 1 lb pork butt boneless, cubed into bite size chunks
  • 2 Tbsp neutral flavoured oil
  • 5 medium potatoes (white or red) diced
  • 1 large carrot diced
  • 2 sweet onions diced
  • 4 cloves garlic minced
  • 1 red pepper diced
  • 4 tsp chicken stock powder
  • 1-2 cups red wine non alcoholic is fine
  • 2 cups water
  • ¼ cup sour cream
  • 3 Tbsp Hungarian paprika
  • 1 ½ tsp caraway seeds
  • salt
  • pepper
  • 8 eggs 1 egg per serving
  • 4 hotdogs

Instructions
 

  • In a medium/large pot over medium heat, coat the bottom of the pot with oil (a few Tbsps). Brown the meat on all sides, do not cook through
  • Remove meat from the heat and caramelize the onion, add more oil if needed to unstick. About 10-15 mins
  • Once browned, add in garlic and mix for a minute until aromatic
  • Add the carrots, pepper and potatoes. Sautee for a few mins then add meat back to the pot
  • Add salt, pepper, paprika, and caraway. Mix together
  • Deglaze with red wine, adjust the amount to your prepference
  • Add the water and stock powder (liquid should nearly cover all the veggies). Bring to a boil, reduce temperature, cover and let simmer on low for 1 hour. Potatoes should be nearly tender
  • Crack lid to let steam escape, reduce the stew for about 15 mins. If needed to thicken the stew further, you can mix in a corn starch slurry (1 tbsp corn starch to 1 tbsp water)
  • Prepare your octopus hotdog and fry up the egg. One octopus and egg per serving.
  • Serve and enjoy!
