Rainbow Grilled Cheese: Inspired by Le Shiner (レインボーフード), Tokyo (gluten free)
This may be the prettiest sandwich I’ve ever seen! While in Japan, you can get some amazing street food and this Tokyo spot should be on your list! In Harajuku Tokyo, you can get this iconic rainbow grilled cheese from Le Shiner on Takeshita Street. I had to make it at home! If you have food allergies or just aren’t in Japan but want the experience and fun of a rainbow grilled cheese, this one’s for you. Thinly shredded mozzarella cheese + food colouring, carefully arranged on buttered bread and grilled until gooey. That’s it! A delicious treat to give you a taste of Japan at home!

- 8 slices of white bread of your choice (I suggest milk bread, or challah but plain white bread if good!) gluten free if necessary
- 4 cups mozzarella cheese grated (I grate mine more finely because I like how it melts better). Add more depending on desired cheesiness.
- butter softened
- food colouring red, blue, yellow & green
Separate the grated cheese equally into small bowls and add a single colour to each one. Mix and add until reached desired colour.
Lightly butter the insides of the bread. Lay each coloured cheese in a line (pink, yellow, green, then blue). close the sandwich.
Heat a nonstick pan on medium heat (or lightly spray your pan with oil. While heating, lightly butter the outsides of the sandwich. Then carefully transfer for the pan.
Cook on each side for about 3-4 minutes or until the cheese looks fully melted and both sides of the sandwich are golden and crisp.
Now it's time to cut your sandwich! Be mindful of the direction you placed your cheese so you don’t cut it the wrong way like I did (only green showed the first attempt so I had to cut the sando like a monster horizontally). You want to cut halfway through all the colours and not down the middle of one.
