GEAR 5th [f]Luffy Mochi: Inspired by One Piece (gluten free)
Inspired by One Piece, I’m making GEAR 5th [f]Luffy Mochi specially for our favourite rubber man and future king of the pirates! I have been so excited to finally see Gear 5th animated! Fresh mochi stuffed with a fluffy vanilla whipped cream, mixed with chopped rambutan, and a swirl of black currant jam makes for a perfect and delicious super stretchy treat to celebrate! I adore One Piece and will never stop making excuses to get excited about everything that happens in this manga/anime and will continue to create special recipes to pair with it. After all FOOD + ANIME = LOVE! 💖

For the Rambutan Whipped Cream:
- 125 ml whipping cream
- 1 tsp cornstarch
- about 5 rambutan chopped into little chunks and patted dry. (you can add more or less if you'd like)
- 1/2 tsp vanilla bean paste
- black current jelly as much as you'd like. I put a little strip in each mochi but would suggest lightly folding in about 2-4 Tbsp to the whipped cream instead.
For the Mochi:
- 120 g Shiratamako glutinous rice flour
- 60 g sugar
- 180 ml water
For the Rambutan Whipped Cream:
Begin whipping your cream, sugar and vanilla until you reach soft peaks. Mix in the cornstarch.
Continue whipping your cream until you have firm peaks but they are not crumbly. Be careful not to over whip the cream or you’ll end up with butter!
Lightly fold in your chopped rambutan and black current jam.
Transfer the whipped cream to a container and place in the fridge to firm up while you make the mochi. This will make it easier to wrap. You can freeze it if you'd like but the fridge does the job well enough.
For the Mochi Dough:
In a medium-large microwave-safe bowl, whisk together the shiratamako, sugar, and water. Whisk until the mixture is smooth and there are no more clumps remaining. Clean the sides of the bowl by scraping down any residual batter.
Cover with plastic wrap and microwave for 2 minutes.
Using a spatula, mix the mixture well. Recover with plastic wrap and microwave for another 1 1/2 minutes.
Generously lay down corn starch in a deep dish and pour out the mochi into it. coat the mochi dough and bench scraper with more cornstarch and separate into 6-8 (depending on how large you want your mochi, the smaller they are the harder to wrap, I go for 8 and I like the size).
To Assemble:
Taking a piece of your mochi dough, flatten it into an even round shape (about 1/4 inch thick). Scoop out about 1 1/2-2 Tbsp of your whipped cream filling and place in the middle of the mochi. Wrap the dough around the cream and pinch the edges together. (If it's too sticky you can add more corn starch, but you want the edges to stick shut.
The mochi is best eaten fresh but it's perfectly delicious to let the filling reset in the fridge for a bit before serving. They are best enjoyed within 3 days of making them.
Be sure to pull and stretch the mochi apart all Gomu Gomu style! Enjoy.
