Cinnamon Sugar French Toast: Inspired by Buddy Daddies (gluten free)

Inspired by Buddy Daddies, I'm making cinnamon sugar french toast. The french toast is fluffy, and sweet, and oh so yummy! It's a simple and perfect, breakfast, brunch, or any meal/snack really. Soft bread, soaked in custard, fried up and coated in cinnamon sugar, you'll certainly have little cartoon hearts floating around your head while enjoying it!

Ingredients
  

  • 3 large eggs
  • 3 Tbsp milk I use unsweetened soy
  • 1/4 tsp vanilla extract
  • dash of nutmeg
  • 1/2 tsp sea salt
  • 6 slices bread (brioche, challah, or Hawaiian are ideal) gluten free if necessary

Cinnamon Sugar Coating:

  • 1/3 cup granulated sugar
  • 3 tsp cinnamon

Optional toppings but highly recommended:

  • salted butter yes salted, trust me on this!
  • fresh blueberries

Instructions
 

  • Mix together cinnamon and sugar then pour half the mixture onto a shallow plate with a lip.
  • In a small casserole dish, whisk eggs together. Then add milk, vanilla, nutmeg, and salt. Whisk again until smooth.
  • Soak a slice of bread in egg milk mixture for a few seconds on each side. You dont want your bread to get too soggy but you want it saturated
  • Grease a frying pan with spray or butter, add 2 slices of your soaked bread and fry on both sides until golden. I usually work through the soaking and frying pattern in twos.
  • When the french toast is cooked, remove from the heat and coat in cinnamon sugar right away. Be careful of your fingers!
  • Pile the french toast high,
  • Serve with a scattering of fresh blueberries and a pat of salted butter on top.
  • Enjoy!
