Red Velvet Donut Ice Cream Sandos: Inspired by Kaguya-sama: Love Is War (gluten free)
Inspired by Kaguya-sama: Love Is War and Valentine's Day, I'm making Red Velvet Donut Ice Cream Sandos. Bouncy mini red velvet donuts, filled with vanilla bean ice cream, dipped in chocolate and sprinkles... What more could you ask for?! This is a simple one-bowl cake recipe and the sandos look super cute (kawaii and you know it). Plus you can totally swap for your favourite ice cream! No matter if you celebrate valentine's day or not, this is a dessert you can and absolutely should treat yourself to.
Prep Time 30 minutes mins
Cook Time 20 minutes mins
Chill Time 12 hours hrs
Servings 9 mini ice cream sandos
Preheat to 350 degrees F, with convection.
Lightly grease a mini doughnut pan.
Whisk the dry ingredients together. Add in the wet ingredients and mix until smooth.
Add drops of red food coloring and mix until you reach a desired color.
Fill the doughnut pan with your batter. You can fill until almost at the top.
Bake for 15-20 minutes. Test with a toothpick. Should come out clean and doughnut should be bouncy to the touch.
Let the donuts cool on a wire rack. When cool, transfer to the freezer to harden a bit. It will make the next step easier.
Slice the doughnut in half, fill with ice cream & freeze for 12-48 hours. You want it very firm before dipping in chocolate.
When solid, dip in melted chocolate and then cover with sprinkles!
Return the sandwiches to the freezer to set.
Enjoy!
