Todoroki’s Zaru Soba: Inspired by My Hero Academia
Inspired by My Hero Academia, I’m making Shoto Todoroki’s favourite meal, Zaru Soba! This dish is super quick and simple to whip up, and it is also very light and refreshing. The cold soba noodles are chewy with a great earthy taste and they pair so well with the flavourful mentsuyu dipping sauce. The bursts of fresh wasabi really brings the whole dish together! This meal is an easy way to channel your favourite half hot half cold hero!
½a slice of nori seaweedshredded. Adjust amount for your preference
Wasabi paste
For the Sauce:
¼cupsakeor chinese cooking wine
½cupsoy saucegluten free
½cupmirin
½tbspgranulated sugar
1tspinstant dashi powder
1cupof water
Instructions
Cook soba noodles according to the package's instructions. While cooking, prepare a medium sized bowl with ice water.
When soba is cooked, strain and rinse with cold water. (DO NOT SKIP! This helps remove the extra starch from the soba). Transfer to the ice bath and let cool.
In a small pot over medium heat, bring sake to a boil and let the alcohol evaporate for about 30 seconds.
Add the rest of the ingredients, bring to a boil, and then turn down to simmer for about 5 minutes over low heat.
Serve the noodles on a bamboo mat over a plate. This will allow the excess water to strain off the noodles.
Garnish with shredded nori and serve with green onions and wasabi on the side.
In a small dipping bowl or cup, add 5 Tbsp of the mentsuyu and 100 ml of water. This is per serving. You can adjust the amount of water to your preferences.
Add some wasabi and green onions to your dipping sauce. Enjoy your dish by dipping your noodles into the mentsuyu!
