Inspired by the finale of Buddy Daddies, I’m making Rei Papa’s perfect French Toast.

I’ve got to be honest, I really loved this anime and it is definitely going on my rewatch list. The finale was perfect and absolutely adorable! I’m a total sap and got really emotional at the cute banter and happy ending…Rei Papa has perfected his French toast (it’s the only thing he can cook) and when he served it up to Miri on her first day of high school, I knew I had to make it.

This is a classic French toast recipe. Brioche bread, soaked in custard, fried up until golden and fluffy, served along side breakfast potatoes, sausages and salad is perfection! It’s quick and easy, but so super delicious. Highly recommend making this brunch spread!

Miri claims that Rei Papa’s French toast is the best, and it really is delicious! I love how it has become this family’s signature dish. OBSESSED!

Ingredients

For the French Toast:

  • 3 large eggs
  • 3 Tbsp milk I use unsweetened soy
  • 1 tsp vanilla extract
  • dash of nutmeg
  • 1 tsp cinnamon
  • pinch of salt
  • 6 slices bread - brioche is ideal gluten free if necessary

For the Roasted Potatoes

  • 900 g little potatoes
  • olive oil
  • salt
  • pepper
  • chili flakes
  • dried rosemary

To Serve:

  • breakfast sausages
  • simple green salad
  • whipped cream
  • powdered sugar
  • maple syrup

Instructions

For the French Toast:

  • In a small casserole dish, whisk eggs together. Then add milk, vanilla, nutmeg, and salt. Whisk again until smooth.
  • Cut bread into thirds so you have fingers. Soak a slice of bread in egg milk mixture for a few seconds on each side. You don't want your bread to get too soggy but you want it saturated
  • Grease a frying pan with spray or butter, add slices of your soaked bread and fry on both sides until golden.
  • When the french toast is cooked, remove from the heat and pile high and sprinkle some powdered sugar on top.
  • Serve with roasted potatoes (recipe below), breakfast sausages, and salad.
  • Enjoy!

For the potatoes:

  • Preheat the oven to 400 with convection and prep a large baking sheet by spraying it with non-stick cooking spray. Set aside.
  • Roughly chop the potatoes into bite size pieces, try to make them even. Spread them out on the baking tray, and drizzle with olive oil.
  • Sprinkle potatoes with salt, pepper, chili flakes and dried rosemary. Toss well to evenly coat in oil and spices and spread the potatoes out on the pan. You can adjust the amount of seasoning here to your tastes.
  • Bake for about 30-40 minutes tossing halfway through. Check the potatoes at the 30 mark and adjust your timing to let the potatoes turn golden and crisp.
  • While these are cooking, you can cook up your French Toast and sausages.
