Inspired by Wind Breaker, I’m making the fluffy tamago sando that  Sakura has on his first day at Furin High school.

The anime just started airing and I have really enjoyed the first few episodes so far. And that’s not only because there’s been a bunch of yummy looking food!

When Kotoha served up the fluffy egg sandwich, I immediately wanted one. Tamago sando are really easy to make and really tasty. They are also a konbini favourite for many people and can be found in convenience stores across Japan.

Boil your eggs and separate the yolks into they’re own bowl. Mash them up with kewpie mayo, sugar, and salt until fluffy. Chop the egg whites into little pieces and mix it into the yolks. Spread a bit of butter onto some lightly toasted white bread (the fluffier the better), and add a generous portion of your chopped egg mixture to one half. Top with some lettuce, close the sandwich, slice and it’s ready! Serve with some fresh seasonal fruits and enjoy.

(A quick note: not all Kewpie mayo is gluten free, so be careful and always read the ingredients! I’m linking the one I use down below. Oh! and I’ve been using this egg timer that I picked up at Daiso in Japan and it works great! If I don’t know exactly how long I want to cook eggs for, I use this timer for reference. I also linked a similar one below for you to see!)

This sando makes for a great lunch or snack, no wonder it’s a classic! Really looking forward to seeing how the rest of the season plays out!

Inspired by Wind Breaker, I’m making the fluffy tamago sando that Sakura has on his first day at Furin High school. Tamago sando are really easy to make and super tasty. They are also a konbini favourite for many people and can be found in convenience stores across Japan. Perfectly boiled eggs + kewpie mayo + sugar + salt served with lettuce on some fluffy bread = equals a classic and delicious sando that you are sure to love!

Servings 2 Sandos

Ingredients
  

  • 4 slices of fluffy white bread gluten free if necessary
  • lettuce a couple of pieces per sando
  • 6 eggs hard boiled
  • 3 Tbsp Kewpie mayo
  • 1 tsp granulated sugar
  • 1/4 tsp salt
  • Butter to spread on bread

Instructions
 

  • Hard boil the eggs. Bring water to boil and carefully drop eggs into water. Let boil for 10 mins.
  • Remove from heat and place in an ice bath until cool. This is important! Do not skip as it helps the membrane separate from the egg. Peel the eggs and separate whites from yolks. Chop the whites and mash the yolks.
  • Mix the kewpie mayo, sugar and salt into the yolks until fluffy. Adjust seasonings to taste. Add the whites in and mix.
  • Lightly butter the slices of bread and the add half the chopped egg to the sandwich.
  • Top with some lettuce, close and then slice in half. Serve with some seasonal fruit of your choice or an orange slice and a strawberry to be anime accurate. Enjoy!
