In celebration of Back to Hogwarts Day, the day that Harry first went to Hogwarts for school, I am happy to share with you a new recipe from my Fantastic Feasts series. 

Since it’s back to school, I thought i’d show you my admission letter to Hogwarts! Of course my letter came through the regular owl mail, rather than bursting through the fireplace like Harry’s. So a little less eventful… 

Anyway, here’s my letter! It’s a simple spiced butter cookie that
is quick, easy, and really delicious!

I spiced up my classic butter cookie recipe and added some food colouring for the seal, and there you go! 

A perfect treat to represent harry’s admission to hogwarts, and the start of a whole new adventure. 

I am so excited to celebrate the day that Harry, Draco, Hermione, Ron, and all our other favourite students first went to Hogwarts. These are a perfect treat to for the special day. 

It is so amazing to think about the all incredible adventures that came after this first day of school…⁠

Fantastic Feasts: Hogwarts Letter Spiced Butter Cookies (gluten free)

In celebration of Back to Hogwarts Day, the day that Harry first went to Hogwarts for school, I am happy to share with you a new recipe from my Fantastic Feasts series. I made a simple spiced butter cookie that are quick, easy, and really delicious! I am so excited to celebrate the day that Harry, Draco, Hermione, Ron, and all our other favourite students first went to Hogwarts. These are a perfect treat to for the special day, or any day...

Ingredients
  

  • 65 g unsalted butter softened
  • 45 g granulated sugar
  • 1 pinch of salt
  • 1 egg yolk room temperature
  • 75 g rice flour I used thai rice flour
  • 25 g almond flour finely ground
  • 1 Tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1 Tbsp milk if needed to help the dough come together, I use soy milk
  • Red food colouring

Instructions
 

  • Preheat your oven to 350°F (with convection). Line a baking tray with a silicone mat.
  • In a medium bowl, add the butter and mix it around to make sure it is soft. Add in the sugar and salt and mix until smooth.
  • Add the egg yolk, rice flour, almond flour, and cornstarch and mix until it comes together as a dough. If the dough is too dry, add in up to 1 Tbsp of milk.
  • Separate a small portion of the dough and colour it red, this will be your seal!
  • On a plastic wrap lined work surface, roll out the plain dough until it is about 5mm thick. Wrap in plastic and set in the fridge or freezer until firm. Repeat with the red portion but make it a bit thinner.
  • Once firm, lightly dust the surface of the dough with cornstarch and using a bench scraper and cookie cutter (I don't have a round shape so I used a Kewpie Mayo lid), cut out your cookies. You can reroll the dough to get as many cookies as you can out of the dough. Don't forget, you need 1 seal per envelope.
  • Arrange the cookies on the baking mat and bake for about 10 minutes. The edges should be golden brown.
  • Let cool on the baking mat, the cookies will harden enough to separate without them breaking, be careful though, they can be delicate if they are on the thinner side.
  • Once cool, the cookies are ready to decorate! Draw the lines of your envelope and stick the seal into place using a small dab of melted chocolate. Then get ready for school because you're going for Hogwarts!
