Inspired by Ponyo, I’m making the special ramen that Ponyo and Sosuke enjoy together!

I love Ponyo! I think the film is sweet and absolutely adorable! This is definitely one of my favourite Studio Ghibli films and I think everyone should see it. After how much you loved my Howl’s Moving Castle breakfast, I got requests for more Ghibli recipes so here you go!

This ramen is really simple to make. In the film, they use packaged instant ramen and add some special toppings to spruce things up. But since gluten free instant ramen options are very limited, I decided to make a simple homemade shoyu ramen instead.

Shoyu ramen is very quick to make and always delicious, so with only a handful of ingredients and a few minutes, so you have to make it!

Shoyu tare + ramen noodles + fresh green onions + a perfect egg + HAAAAMMM!!! = Ponyo’s perfect bowl of ramen!
I know you’re going to love it, so you have to try it for yourself.

If you make this recipe, I would absolutely love to hear your feedback and would love to talk to you all some more so please leave a comment! Also, if you do make this recipe, I’d really love to see your creations so please tag me on Instagram.

Servings 4

Ingredients

  • 4 thick slices of ham
  • 2 eggs medium boiled (1/2 egg per serving)
  • 4 bundles of dried ramen noodles
  • 2 green onions thinly sliced (adjust amount to your liking)
  • 7 cups of water
  • 2.5 tsp hon dashi
  • 2 tsp chicken boullion

Shoyu tare:

  • 2 tbsp sesame oil
  • 2 garlic clove
  • 1.5 inch knob grated ginger
  • 1/3 cup soy sauce
  • 1.5 Tbsp mirin
  • 1 tbsp sake

Instructions

For the broth

  • Bring water to a boil and add in dash and chicken bouillon. Mix until fully dissolved.
  • In the meantime, cook noodles following package instructions.

Make the shoyu tare

  • Heat sesame oil in a small skillet over medium-high heat.
  • Add the garlic and ginger and sauté until fragrant, about 30 seconds. Stir and add in the soy sauce and mirin. Stir then remove from the heat. Strain out solids from the tare.
  • Add the shoyu tare to the broth one spoonful at a time until it tastes well seasoned to your liking.

For the toppings

  • Crisp/brown ham slightly in a frying pan. No need to use oil here, just let it cook for a few minutes on either side. Slide in half and serve 2 halves per bowl.
  • Boil eggs to your desired doneness. I like a medium boiled egg for this recipe as the yolk is a bit jammy but not too runny.
  • I suggest topping the ramen with some shichimi togarashi for an extra little hit of flavour.

To Assemble

  • Put noodles down in the bowl, pour over the broth and add tare (adjust to your liking). Finish the bowls with all the toppings, and enjoy! Be sure to eat the ham with your fingers, but be careful it's hot hot hot!
